A long, thin and flexible boning knife to navigate the removal of bones and gristle with ease. The blade is X50CrMoV15 Japanese stainless steel, hardened and tempered over 14 steps to 55-57 Rockwell, then hand-sharpened to a 26° cutting angle.

The reverse-wedge, anti-fatigue handle is full tang and triple riveted in FSC®-certified Pakka wood, layered hardwood and resin engineered for strength.

The optimised bolster protects the hand and lets the full edge be used and sharpened to the heel.
